Probably Super Mario 64.
Basically all the older (and newer) Zelda games.

I agree that Doom was definitely influential in the world of gaming.

I think Tetris was pretty influential in the world of puzzle games.

My most loved game however would be Deus Ex.
Zelda OOT
I promised myself if this got brought up I would answer with this:
I think one of the most influential games should go to Gauntlet. It has created an entire genre of hack n slash dungeon crawlers and other variations. I think you could even connect games like god of war or devil may cry to it.
Super Metroid is the biggy for me.Zelda is another huge one. The top down action adventure style is what opened me up tothat view point, leading me to some of my favorite games of all time, Ultima Online (pre-expansions), Diablo series, Baldur's Gate, etc. Had I never got hooked on Zelda, I don't think I would have given those other games a chance.I wish Nintendo would release a new top-down Zelda for WiiWare... perhaps even have it 3D isometric.
God of war. It made real time events. (well shenmue made it but god of war revolutionised it)
Final Fantasy VIII was the first video game that I really got into and continued (and backtracked) through the series.
Well.. I think the most influential game is Pong, it was like the first... right? or maybe Super Mario Bros because it revitalized the industry after the crash.Still, my most loved game is probably The Legend of Zelda: Ocarina of Time or Super Mario World. Both coincedentally are also very influential as well.
For me it was probably Zelda OOT.but before that came Donkey kong Country, I grew up on it my parents thought I had a serious problem Because i wouldn't stop playing it.
I think Golden Eye 64 revolutionised the standard and genre for FPS games. Overall the most influential must be Super Mario Bros .....
The 8-bit Nes is what opened me up to my love for gaming. Not to say i haven't loved games for the SNES, N64, PS, PS2 and so forth, but the influental platform was the NES at the end of the day. These are the games I think impacted me most off that system:Metroid
Super Mario Bros 3
Kid Icarus
Metal Gear
Mega Man 3
Legend of Zelda
Castlevania 2
Metroid and Zelda are a tie for me. the whole idea of having to search for items and get power-ups and weapon upgrades was just awesome.
My most loved game however would be Deus Ex.
Deus Ex is absolutely brilliant. One of the few PC games I really loved. Even the sequel was still great, although I don't think it comes close to the original.I personally think that Shen Mue is one of the most influential games ever. It has this movie-like feel and offers an impressive freedom at the same time. I'm sure it would have gotten a lot more recognition if it hadn't been released on a dying platform. My personal favorites however are Shining Force (GEN) and Wonderboy in Monsterland (MS).
Doom was the one. All FPS are in the shadow of the mighty DOOM!
I'd have to go with shining force
For its time it allowed you to have a huge aray of optional characters in your team each unique from the next guy. (30 or so from how i remember it) and it certainly was the first to succesfully mix strategy and RPGI just recently started replaying this game and its still great fun despite its age wich cant be said of many games
Shenmue 4 LIFE!!
Megaman 1-3
